If you are looking for a nice time with a wine to refresh your senses and to cool down your pa late then this is definitely your best choice. Sti ll, it is not a plain wine: when the bottle opens and the glasses are fi lled, scents of ly- chee, rose, mint, rose peta ls and lemon blossoms fi ll the air. It has an explosive mouth feel and the flavours match the scents. Despite their low a lcohol content, Moscho- fi lero wines are quite acid and crispy. Tips Best served at 12-14 °C. Chicken bites and white cheese is an idea l match. Dry and sparkling wines should be consumed when young but they have good ageing potentia l as well. MOUCHTARO …HISTORICRED Findings in the area of the Va lley of the Muses, an area dedicated to the 9 Muses as its name revea ls, are not limited to archaeology but a lso include an extraordinary loca l vari- ety, red Mouchtaro. Hesiod, poet and father of viniculture, first men- tioned it back in 700 B.C. He origi- nated from the area and in his writ- ings, he associates the variety with the famous Vivlinos wine. However, information on its cultivation is only 80 years old. This nice, densely clustered variety, produces red wi- nes that are tota lly different to those we are used to. They have an extraordinary aroma, where red fruits (sour cherry, strawberry and cherry) and other original hints like iodine and ink wrapped in a veil of caramel, vanilla and mocha all parade in har- mony. Tips Best served at 18-20 °C. Its strong character requires equa lly strong company like an aged gruyere, sala- mi or a Greek traditional dish with red sauce. It can evolve for many years and you should test its limits. BEGLERI …SOFTANDHIDDENWHITEFORCE One of those forgotten varieties of the Greek vinic world that deserves to return to our vinic memories. The island of Ikaria was its birthplace but it soon migrated to other islands like Chios and Lesbos. Thiswhite vari- ety produces the Local White Wine of Ikaria, with grapefruit, flower and citrus fruit scents. It has a rich, acid mouth feel with a delicious fruity aftertaste. Nowadays, many people try to know it better and some experts find common elements with the popular Sauvignon blanc. Argua- bly, they resemble a lot and you can verify that in your glass. Thus, it would be useful to follow this variety and its dry wines. Tips Best served at 10-12 °C. Pair it with an avocado and shrimp dish, a vegetable sa lad or a cauliflower soup.
