At the kingdom of Xinomavro, it managed to prevai l and to become the newest proposa l. It is an attractive yellow blonde wine with explosive tropica l fla- vours of banana, pear and apple. It has an amazingly ba lanced mouth feel that combines a lcohol and acidity in perfect harmony. It opens new horizons and enhances Naousa’s significant character and high qua l- ity. Tips Best served at 12-14 °C, paired with an aromatic Cretan gruyere, a fruit sa lad or white fruit tarts. RODITIS …THEHIDDENFORCE One of the oldest Greek varieties, a proper variety of surprises. It pro- duces white wines whilst the grapes have a pleasant red colour. Roditis is cultivated in many areas of Greece, mainly in Patras and Aigio. There, at the mountainous and bles- sed vineyards of the area of Aigia- leia, it managed to change the way we think about it. It changed from being an average, easy and modest variety to creating great wines with character and persona lity. Those wi- nes deserve your attention. They have a fruity bouquet with yellow tropica l and citrus fruits playing the leading role. The pineapple usu- a lly dominates the mouth feel with touches of minera ls. Exploring the- se wines is a cha llenge and a cha l- lenge that is not expensive at a ll. In genera l, they have very low pri- ces considering their high qua lity. Try the single varieta l dry wines or the various blends with other vari- eties. Tips Best served at 12-14 °C. Pair it with courgettes or gri lled Ha llou- mi cheese with marma lade. You can open the bottle immediately or keep it for 2-3 years. ROBOLA …THELADYOFTHEIONIANSEA It is the Lady of the Ionian Sea and produces Appellation of Origin of Superior Qua lity wines. Spotted a ll over the Ionian Sea it is partic- ularly famous in Cepha lonia mainly at the mountainous and semi-moun- tainous areas of the island. The high potentia l of the soi l combined with the a ltitude, the sunshine and the sea breeze make Robola an irre- sistible variety. It has an unpara l- leled aromatic pa lette and a fines- se that makes a ll wines exception- a l. Its vivid golden colour invites us to experience fresh lemony and citrus fruits flavours. Its high aci- dity makes it more intense and the aftertaste is strong and lengthy. Tips Refreshing when served at 10-12 °C. It pairs with seafood, shellfish, gri lled fish and most of the spe- cia lties of the cuisine of the is- lands.
