G R E E K V I N E Y A R D SAVVATIANO ...THEMISUNDERSTOODWHITE It is one of the most ancient varieties and dates back to 2500 years ago in Attica! It is cultivated in the broader vinic area of Sterea E llada and in sma ll areas of the Cyclades, the Pelo- ponnese, Thessa ly and Macedonia. The climate of Attica helps this variety unfold its best qua lities a lways com- bined with proper cultivation tech- niques that protect it from oxidation, which is its main enemy. It gives excel- lent bright green-yellow coloured wines with scents of chamomile, banana and apricot. However, in years of early harvest it gives sharp wines with high levels of acidity. It is related to the production of retsina wine, a wine of mass production and this led to the use of cultivation techniques that aimed at overproduction rather than high qua lity. This is the reason why this superb Greek variety lost its good reputation. Cur- rently, especia lly in the area of Meso- geia that hosts major Savvatiano vine- yards, significant effort is made to restore its fame. Tips A fresh Savvatiano wine is best served at 10-12 °C and a barrel-matured one at 12-14 °C. It is the idea l match for Ha lloumi cheese and Greek traditiona l dishes like stuffed vine leaves or green beans. A barrel-aged Savvatiano wine is still interesting after 3 years. OTHER GREEK VARIETIES The richness of the Greek Vineyards is inexhaustible and admirable. In each place they are developed in sma ller quantities more varieties. The red Blachi- ko from high a ltitudes of North Greece, the white melodic Goustolidi from Ionian, the white Dafni from Crete, the aromatic white Kakotrygis, the white Katsano with high alcohol fromAegean, the red Krasato from the heart of Rapsanis, the fruity black Ka labrytino from Corinthus, the white Mpatiki with double origin from centra l and northern Greece, the Ionian white Pavlos with the good acidity, the white Petropoylianos from Peloponnesse, the white Skiadopoulo of Zante and finally the red and historical Fokiano.
