G R E E K V I N E Y A R D AGIORGITIKO …REDVELVET Originating from the area of Nemea, it is a red variety a lso known as Nemea black, Nemeatiko or even Hercules’ blood. Once in glass, its numerous different persona lities add to its charm. Depending on the a ltitude of the vineyard, it could give a wide range of wines, from light rosé wines and youthful reds to full-bodied aged wines and ex- plosive dessert wines. This multi- faceted character complemented by elegance and high intensity invites you to experience a ll its potentia l expressions. Rosé wines are fruity and ruby coloured, the fresh red wines have violet tints and a fra- grance of red fruits where cherry plays the leading role. The ripe red wines combine nice tannins with a rich aromatic pa lette of dried fruits, mainly plums and spices whi le a ll sweet wines are complex and well ba lanced. Evolution sees another expression of this variety, the white wine. TIP Best serving temperature varies according to wine type, white, fresh, aged or sweet. It can be easily pai- red with different kinds of food. Best combinations are with mush- rooms, eggplants and gruyere chee- se. A fresh Agiorgitiko could be kept for a year whi le those matured in barrels could evolve for at least 8-10 years. AIDANI …MELODICWHITE It comes from the Aegean Sea, main- ly from the island of Santorini. It is a lso found in other islands like Paros, Naxos and Crete. Its name derives from the “Edani vine” men- tioned by Hesychius in 5th century B.C. It is famous for participating in the Appellation of Origin SANTORINI of Superior Qua lity wine, next to leading variety Assyrtiko. However, it managed to stand out as a unique proposa l for those in search of something different. It has a flora l nose with hints of yellow fruits, flowers and minera ls. Its taste is not very acid with low a lcohol con- tent and it is mild and ba lanced. TIP It is of course best served chi lled, at around 10-12 °C. Simple dishes, a cheese pie for example, could easi ly tempt it. Meanwhi le, shrimps or pasta are the perfect match. Its potentia l should not be underesti- mated as it could age for up to five years. ATHIRI …WITHASCENTOFTHEAEGEANSEA A variety with a long history that first appeared in the islands of the Aegean Sea and spread rapidly across the Cyclades, the Dodecanese, Crete, Boeotia, Phthiotis and Ha lkidiki. It blends perfectly with Assyrtiko and Aidani varieties in Santorini as far as Appellation of Origin SAN- TORINI of Superior Qua lity wines are concerned. In Rhodes and Sitho- nia it produces premium high-a lti- tude wines. Nowadays, it is found in various labels as a single variety and is a superb summer proposa l, but can a lso satisfy you a ll year long. Wines of this variety are main- ly dry, rather lively with a citrus fruit bouquet. They have a pleasant and quite often, depending on the acidity, sharp taste. Apart from whi- te wines, it can a lso be found in sparkling wines and even in sweet wines, a lone or a long with some other white variety. TIP It is best served chilled at 10-12 °C and in sweet wines at 8-10 °C. You could try it as an aperitif or with white cheese like Ha lloumi or For- maela. It pairs perfectly with oys- ters and seafood. It is destined to be consumed whi le it is young and can last up to 2-3 years. However, there are some exceptions where it can age for up to 5 years.
