GILALI
The Xinomavro and the complementary varieties (Krasato and Stavroto) come from 60+ years old singe vineyard located in the heart of the Rapsani vine zone. Organic farming and biodynamicism, spontaneous fermentation and light or no filtering. This winemaker’s single goal is for his wine to reveal the variety in itself, but also all the surrounding natural conditions in which those grapes were grown: the soil type, the angle of the slope on which it was grown and the specific micro-climate there. It stays in French oak barrels for about 20 months, it ”rests” for at least for one year in bottles; and thus we have a gentle red that sets the tone for long winedrinking.
