These old vines possess a unique ability to produce lower yields with richer fruit, purer expres- sion, and a more authentic sense of terroir. Hand-picked, fermented in stainless steel, and aged on its lees for five months. Although the rare Katsakoulias variety was tradi- tionally used for blending rather than as a single-varietal wine, its charming character reveals a refreshing rosé with a playful character and gastronomic intensity, without being austere (pH: 3.34, acidity: 5.10 g/L, residual sugar: 2.0 g/L). It is about love for the land and care for those who cultivate it. From limestone-clay vineyards in Tarragona, the grapes are hand-harvested, undergo short cold maceration in the press, and ferment in stainless steel with indigenous yeasts, without fining or added sulfites. Sourced from collaborating growers in Nemea and following organic farming protocols, Three Hills is an every- day red fermented in stainless steel tanks and aged for four months in used French oak barrels. Bright ruby color, with an inviting aromatic profile of plum and sour cherry complemented by spice notes. Elegant and juicy on the palate, with rounded tannins and a pleasant fruity finish. € 5,50 PERAMARÉ Ikaria island, Aegean sea Karimalis Winery / Fokiano / 2025 / 13,5% Legend has it that Dionysus, the god of wine, was born in Ikaria. Wild and laid-back, famous for the longevity of its inhabitants, the island remains one of the few authen- tic places left in the Aegean. As locals say, “You do not choose Ikaria; Ikaria chooses you.” Giorgos Karimalis began reviving indigenous grape varieties in the 1990s and, together with his daughter Iliana, has become a worthy ambassador of the island’s wine tradition. The carefree, summery, light-red Peramaré makes its debut at hete- roclito, standing out for its freshness and aromas of blood orange and grapefruit. On the slopes of Mount Helmos, above 700 meters, lie some of the country’s most striking vineyards. Fermented and matured in a 5-ton wooden tank, the wine evokes elegant red wines of Central European origin. Aromas of red and black fruits, with notes of smoke. A refined palate dominated by black- berry, plum, mint, and sweet spices. Well-integrated tannins and acidity, with a fla- vorful finish. € 7.00 XINOMAVRO ΝΑΤURE Naoussa-Imathia, Macedonia Thymiopoulos Vineyards / Xinomavro / 2024 / 14% Apostolis Thymiopoulos is the most recognizable Greek winemaker of his genera- tion in the international wine markets. Although he is closely associated with iconic reds such as Earth & Sky, Kaiafas, and Aftorizo. The label Nature (kite) was initially released for export, but it was soon embraced by local naturalistas as well. Aromat- ically, it is a typical expression of the variety, with notes of tomato confit, olive paste, and slight animal nuances. Good balance of tannins and acidity, with a generous finish. In three words, a next-generation Xinomavro in your glass. € 7.00 GOUMENISSA CHATZIVARITIS Goumenissa-Kilkis, Macedonia Chatzivaritis Estate / Xinomavro - Negoska / 2021 / 13,5% The vineyard-rich region of Goumenissa is the smallest protected Xinomavro zone (alongside Naoussa, Amyndeo, and Rapsani), where the variety is blended with at least 20% Negoska, which softens the blend. The name Negoska derives from the Slavic name for Naoussa, Negous. Vaggelis Chatzivaritis and his daughter Chloe have brought remarkable visibility to the appellation, with enduring worth wines. Fermented in wooden tanks, with extended maceration and eight months on the lees before transfer to French oak barrels for an additional twelve months of aging. Deep purple color with brick-red highlights, complex aromas dominated by black- berry and cherry, complemented by spices, tomato, olive, and vanilla. Full-bodied on the palate, with rich tannins and a long finish. € 8.50 INDIGO Val de Loire, France 1006 Vins de Loire / Gamay Saint Romain / 2023 / 12,5% For the past three years, every first Sunday of February at 10 a.m., Pauline wel- comes us to her winery as host of the alternative Chai! fair in Angers.
