We are proud to introduce you to the Il Roccolo di Monticelli, a wine you find exclusively in heteroclito, born from the family’s desire to revive a 70-year-old virgin vineyard that lies on the limestone hills between Verona and Soave. With respect to biodiversity, the vines grow in the midst of olive trees and beehives; these are no intervention wines from the white varieties Garganega and Trebbiano di Soave. Manual harvest, sorting of the finer grapes, spontaneous fermentation in stainless steel tanks for two weeks, followed by a nine-month stay with the lees, no stirring. Unfined, unfiltered, a unique choice for conscientious naturalists.
